High Protein Lasagna one of my favorites -
INGREDIENTS:
1 pound 93/7 Ground Turkey OR 95/5 Ground Beef (I seasoned it myself, or you can buy it Italian Seasoned)
16 ounces (2 cups) marinara sauce (find a no-sugar added one!)
1.5 cups Good Culture Cottage Cheese (recommend blending for smooth consistency)
1/4 cup shredded Parmesan cheese
1 tbsp oregano
1 tbsp basil
1 tsp garlic powder
1 tsp parsley
6 oven-ready lasagna noodles (I use Jovial gluten free lasagna noodles)
4 ounces (1 heaping cup) shredded lite mozzarella
OPTIONAL: Add in diced or sliced veggies like zucchini, mushrooms, spinach, etc.
DIRECTIONS:
- Pre-heat oven to 350, then in a large skillet cook ground turkey or beef (if not seasoned already, add some extra italian seasoning (basil, oregano, garlic, parsley - to taste). Once cooked, stir in marinara sauce, set aside.
- Meanwhile, in a medium mixing bowl, combine cottage cheese, Parmesan cheese and Italian seasoning.
- In an 8 x 8 to 8 x 11" baking dish that has been sprayed with nonstick cooking spray, layer 1/3 meat sauce, 2-3 noodles, and 1/2 cottage cheese mixture.
- Repeat layering process with meat sauce, noodles and then cottage cheese mixture.
- One more layer of meat sauce and then top with mozzarella.
- Cover with tin foil. Bake for 40 minutes at 350ºF. Remove tin foil and bake for another 20-25 minutes. I finished mine in the broiler too!
